Prepare the Cardamom Sugar
In a small saucepan, combine the granulated sugar and cardamom pods. Heat over low flame until the sugar begins to melt slightly and the cardamom aroma is released. Remove from heat, allow to cool, and then grind to a fine powder.

Blend the Avocado Mixture
In a blender, combine the ripe avocados, white chocolate (melted), heavy cream, egg yolks, vanilla extract, and a pinch of salt. Blend until smooth and creamy.

Bake
Bake in a preheated oven at 325°F (160°C) for about 30-35 minutes, or until the edges are set but the centers are still slightly jiggly.

Cool and Chill
Remove the ramekins from the water bath and allow to cool to room temperature. Then refrigerate for at least 2 hours before serving.

Caramelize the Sugar
Before serving, sprinkle a thin layer of the cardamom sugar over the top of each crème brûlée. Use a kitchen torch to caramelize the sugar until golden and crispy.

Serve
Allow the crème brûlée to sit for a minute after caramelizing the sugar, then serve immediately.
