Caper and Herb Demi Glaze

Method

Prepare the Beef Medallions

    Sear the Beef

    Heat olive oil over medium-high heat in a skillet. Season beef tenderloin medallions with salt and black pepper. Sear each side for about 3-4 minutes until browned. Remove from skillet and let rest.

Prepare the Caper and Herb Demi Glaze

    Make the Sauce

    In the same skillet, add minced garlic and cook for 30 seconds. Pour in beef stock and demi-glace sauce, bring to a boil, then simmer for 10 minutes. Stir in capers, parsley, thyme, and adjust seasoning to taste.

Prepare the Caramelized Brussels Sprouts and Bacon

    Cook the Bacon

    In a skillet, cook diced bacon until crispy. Remove bacon and set aside, leaving the grease in the pan.

    Caramelize the Brussels Sprouts

    Add halved Brussels sprouts to the skillet with olive oil, salt, and pepper. Cook for about 10-12 minutes until they are golden brown and tender. Stir in the cooked bacon.

Prepare the Chive and Cheddar Mashed Potatoes

    Cook the Potatoes

    Boil cubed potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.

    Mash and Mix

    Add butter, milk, cheddar cheese, chives, salt, and black pepper to the potatoes. Mash until smooth and creamy.

Serve

    Plating

    Slice the rested beef medallions and serve topped with the caper and herb demi glaze. Serve alongside caramelized Brussels sprouts and bacon, and chive and cheddar mashed potatoes.
