Meatballs and Sauce

Method

Preparation and Cooking

1

Prepare the Meatballs

In a large bowl, combine the ground lamb, breadcrumbs, egg, minced garlic, chopped parsley, cumin, salt, and black pepper. Mix until well combined.

2

Shape the Meatballs

Form the mixture into meatballs, about 1 inch in diameter.

3

Cook the Meatballs

In a large skillet over medium heat, add a splash of oil and cook the meatballs until browned on all sides and cooked through, about 10-12 minutes. Remove from skillet and set aside.

4

Prepare the Sauce

In the same skillet, add marinara sauce and heat until simmering. Stir in the sherry, heavy cream, and demi-glace. Simmer for another 5 minutes.

5

Add Spinach and Meatballs

Add the chopped spinach and meatballs to the sauce. Simmer until spinach is wilted, about 3-4 minutes.

6

Cook the Pasta

Meanwhile, cook the casarecce pasta according to package instructions. Drain and set aside.

7

Combine and Serve

Toss the cooked pasta with the meatball and sauce mixture. Serve topped with crumbled feta cheese.
