Prepare the Tuna Poke
In a bowl, combine the diced sushi-grade tuna, soy sauce, sesame oil, and chopped green onions. Mix well and set aside to marinate for about 15 minutes.

Make the Orange Miso Vinaigrette
In a small bowl, whisk together the orange juice, rice vinegar, miso paste, and a pinch of salt until smooth. Adjust seasoning to taste.

Prepare the Cucumber Cups
Cut the cucumbers in half lengthwise and scoop out the seeds using a spoon to create cups. Arrange them on a serving platter.

Toast the Wonton Crisps
Preheat the oven to 350°F (175°C). Cut wonton wrappers into triangles and spread them on a baking sheet. Bake for about 5-7 minutes or until golden brown and crispy.

Assemble the Dish
Spoon the marinated tuna poke mixture into each cucumber cup. Drizzle with the orange miso vinaigrette and sprinkle with toasted sesame seeds. Serve with wonton crisps on the side.
