Panna Cotta Preparation

    Prepare the Gelatin

    In a small bowl, sprinkle the unflavored gelatin over 3 tablespoons of cold water. Let it sit for 5-10 minutes until it blooms.

    Heat the Cream Mixture

    In a saucepan, combine heavy cream, whole milk, sugar, and a pinch of salt. Heat over medium heat until the mixture is warm but not boiling.

    Combine Gelatin and Cream

    Remove the saucepan from heat and stir in the almond and vanilla extracts. Add the bloomed gelatin and stir until fully dissolved.

    Set the Panna Cotta

    Pour the mixture into serving glasses or ramekins. Refrigerate for at least 4 hours or until set.
