Prepare aromatics

Finely dice the onion, green pepper and celery (the classic mirepoix/holy trinity). Mince the garlic and set aside.

In a large heavy-bottomed skillet or Dutch oven, heat the vegetable oil and 2 tablespoons of the butter over medium heat until shimmering.

Add the diced onion, pepper and celery. Sauté, stirring occasionally, until softened and translucent, about 6–8 minutes. Add the garlic and cook 30–45 seconds until fragrant.

Push the vegetables to the sides of the pan. Add the remaining 2 tablespoons butter and reduce heat to medium-low.

Make a blonde roux

Stir in the flour and cook, stirring constantly with a wooden spoon or spatula, until the mixture is a blonde/light tan color and smells slightly nutty, about 3–5 minutes. Keep the roux moving so it does not brown too darkly.

Liquids & Simmer

While stirring constantly, slowly whisk in the white wine (if using) to deglaze, then gradually whisk in the chicken stock until smooth. Increase heat slightly to bring the mixture to a gentle simmer.

Scrape any browned bits from the bottom and simmer for 6–8 minutes to thicken and cook out the flour taste, stirring occasionally.

Stir in the heavy cream, reduce heat to low, and maintain a gentle simmer so the sauce is thick but still saucy, about 3 minutes.

Seasonings & Spice Blend

Mix the chili powder, cumin, coriander, smoked paprika, oregano, cayenne, salt and black pepper in a small bowl so the spices are evenly distributed.

Stir the spice blend into the simmering sauce. Taste and adjust seasoning: add additional cayenne for heat or a pinch more salt if needed.

Cheese, Crawfish & Finish

Lower heat to the lowest setting. Gradually stir in the grated cheddar, a handful at a time, allowing it to melt fully between additions to create a smooth, glossy cheese sauce. Do not boil after adding cheese to prevent separation.

Add the cooked crawfish tails to the sauce and warm through gently for 2–3 minutes. If the crawfish are cold or frozen, ensure they are fully heated but avoid overcooking to keep the texture tender.

Stir in the lemon juice, sliced green onions and chopped parsley. Adjust consistency with a splash of stock or cream if sauce is too thick. Final taste: adjust salt, pepper or hot sauce to preference.

To Serve

Spoon a generous portion of steamed rice or creamy grits into shallow bowls or plates.

Ladle the chili cheese étouffée over the rice or grits. Garnish with extra chopped green onion and parsley. Serve immediately with hot sauce on the side.
