Cooking the Pasta

Cook the macaroni
In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
Making the Cheese Sauce

Add milk
Gradually whisk in milk until smooth. Continue cooking until thickened, about 5 minutes.

Incorporate cheeses
Reduce heat to low and add cream cheese, sharp cheddar, Gruyère, Parmesan, Fontina, and goat cheese. Stir until all cheese is melted and sauce is creamy.

Season the sauce
Season with salt, black pepper, and garlic powder. Mix well and remove from heat.
Combining and Baking

Combine pasta and cheese sauce
In a large mixing bowl, combine cooked macaroni and cheese sauce. Mix until pasta is well coated.

Prepare herb crust
In a small bowl, mix panko breadcrumbs, chopped parsley, thyme, olive oil, and salt.

Assemble and bake
Transfer macaroni and cheese to a greased baking dish. Sprinkle herb crust evenly over the top. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes until golden and bubbly.
