    Prepare the Vegetables

    Begin by washing and cutting the red bell peppers, zucchini, and red onion into bite-sized pieces. Mince the garlic cloves.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

    Add the Remaining Vegetables

    Add the chopped red bell peppers, zucchini, and red onion to the skillet. Sauté for about 5-7 minutes until the vegetables are tender.

    Season the Vegetables

    Stir in the red chile powder, cumin, salt, and black pepper. Cook for an additional 2-3 minutes until well combined.

    Warm the Tortillas

    While the vegetables are cooking, warm the corn tortillas on a hot griddle for about 30 seconds on each side.

    Place a generous amount of the red chile vegetable mixture in the center of each tortilla. Top with fresh cilantro before serving.
