Prepare the Pork
Cut the pork shoulder into large chunks and season with salt, pepper, cumin, and oregano.

Combine Ingredients
In a large pot, combine the seasoned pork, orange juice, lime juice, garlic, bay leaves, and water.

Cook the Pork
Bring the mixture to a simmer over medium heat, then reduce heat to low, cover, and cook for about 3 hours, or until the pork is tender and easily shreds.

Crisp the Pork
Preheat your wood-burning oven or broiler. Spread the shredded pork on a baking sheet and place it in the oven until crispy, about 10-15 minutes.
