Method
Preparation
- 1
Prepare the Fish
In a bowl, mix olive oil, minced garlic, lime juice, cumin, smoked paprika, salt, and black pepper. Marinate the Oaxacan fish fillets in this mixture for at least 30 minutes.
- 2
Cook the Fish
Preheat your wood-burning oven or grill. Cook the marinated fish fillets for about 5-7 minutes on each side or until they are cooked through and flaky.
- 3
Make the Tortillas
While the fish is cooking, prepare the corn tortillas. Using masa harina, water, and a pinch of salt, form the dough and cook the tortillas on a hot griddle until lightly browned on both sides.
- 4
Assemble the Tacos
Once the fish is cooked and the tortillas are ready, flake the fish into pieces. Place the fish on the tortillas, and top with chopped cilantro, sliced radishes, and avocado. Add crushed red pepper flakes to taste.
