Chop the Chocolate
Finely chop the Mexican chocolate and place it in a heatproof bowl.

Heat the Cream
In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not let it boil.

Combine Cream and Chocolate
Pour the hot cream over the chopped chocolate. Let it sit for 2-3 minutes to allow the chocolate to melt.

Stir Until Smooth
Using a whisk or a spatula, gently stir the mixture until it is completely smooth and glossy.

Add Butter
Add the butter and continue to stir until it is fully melted and incorporated into the ganache.

Cool the Ganache
Let the ganache cool at room temperature or refrigerate for a thicker consistency.
