Prepare the Beef
Season the chuck roast with salt and black pepper. In a large skillet, sear the roast on all sides over medium-high heat until browned, about 5-7 minutes per side.

Add Ingredients to Slow Cooker
Transfer the seared beef to a slow cooker. Add the chopped onion, minced garlic, chipotle peppers, cumin, oregano, bay leaves, beef broth, and lime juice.

Cook the Barbacoa
Cover and cook on low for 8 hours or on high for 4 hours, until the meat is tender and shreds easily.

Shred the Beef
Remove the beef from the slow cooker and shred using two forks. Return the shredded beef to the slow cooker and mix with the juices.
