    Prepare the Potato Cakes

    Peel and grate the potatoes into a bowl. Squeeze out excess moisture and transfer to a mixing bowl.

    Mix Potato Ingredients

    Add melted butter and egg to the grated potatoes. Season with salt and pepper, and mix until well combined.

    Form Potato Cakes

    Shape the mixture into small cakes, about 2 inches in diameter.

    Cook Potato Cakes

    In a skillet over medium heat, add a little butter. Cook the potato cakes for about 4-5 minutes on each side until golden brown. Remove and keep warm.

    Prepare the Scotch Fillet

    Season the scotch fillet with salt and pepper. Press the sesame seeds onto both sides of the fillet.

    Cook the Scotch Fillet

    Heat olive oil in the same skillet over medium-high heat. Add the scotch fillet and cook for about 4-5 minutes on each side, depending on thickness and desired doneness. Remove from heat and let rest.

    Make the Honeyed Pedro Ximenez Sauce

    In the same skillet, add the Pedro Ximenez wine and honey. Simmer on low heat until reduced by half, stirring occasionally.

    Plate the sesame crusted scotch fillet alongside the potato cakes. Drizzle the honeyed Pedro Ximenez sauce over the top and enjoy.
