Heat a skillet over medium heat and melt 1 tablespoon of butter. Dip each slice of brioche in the egg mixture, ensuring both sides are coated. Place the soaked brioche in the skillet and cook until golden brown, about 3-4 minutes per side. Repeat with remaining slices, adding more butter as needed.

Cook the Bacon
In a separate skillet, cook the bacon until crispy. Remove and drain on paper towels.

Prepare the Rosewater Mascarpone
In a small bowl, mix the mascarpone cheese with rosewater until smooth and well combined.

On a plate, stack the French toasted brioche, top with grilled banana, crispy bacon, and a dollop of rosewater mascarpone. Drizzle with maple syrup to taste. Serve immediately.
