Marinate the Chicken
In a large bowl, combine the buttermilk, salt, pepper, and paprika. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight.
Prepare the Coating
In a separate bowl, mix together the flour and cornstarch. Season with additional salt and pepper to taste.
Cook the Bacon
In a skillet, cook the bacon over medium heat until crispy. Remove and drain on paper towels. Reserve some bacon fat if desired.
Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).
Coat the Chicken
Remove the chicken from the buttermilk, allowing excess to drip off. Dredge the chicken in the flour mixture, ensuring an even coating.
Fry the Chicken
Carefully place the coated chicken in the hot oil. Fry for about 12-15 minutes or until golden brown and cooked through. Remove and drain on paper towels.
Assemble the Sandwich
In a sandwich bun, place the fried chicken, top with a slice of pepperjack cheese, crispy bacon, lettuce, and tomato slices. Drizzle with ranch dressing before closing the sandwich.
