Cook the Pasta

In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce

In the same pot, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute, stirring constantly. Gradually whisk in the milk and bring to a simmer. Cook until thickened, about 5 minutes.

Add the Cheese

Remove the pot from heat and stir in the cheddar and Monterey Jack cheeses until melted and smooth. Season with salt and black pepper.

Combine Pasta and Sauce

Add the cooked pasta to the cheese sauce and stir until well coated.

Prepare the Topping

In a separate bowl, mix the crushed Ritz crackers, grated Parmesan cheese, and melted butter until combined.

Assemble and Bake

Preheat the oven to 350°F (175°C). Transfer the macaroni and cheese to a greased baking dish. Evenly sprinkle the Ritz topping over the top. Bake for 25-30 minutes or until golden brown and bubbly.
