Prepare the Slaw

In a large bowl, combine the thinly sliced apple, shredded fennel, and cabbage. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, olive oil, sugar, salt, and black pepper. Pour the dressing over the slaw mixture and toss to coat. Let it sit in the refrigerator for at least 30 minutes to allow the flavors to meld.

Make the Jalapeño Aioli

Finely chop the jalapeño and garlic. In a small bowl, mix the mayonnaise with the chopped jalapeño and garlic. Add a pinch of salt and mix well. Adjust seasoning to taste. Set aside.

Cook the Bratwurst

Preheat your grill or skillet over medium heat. Cook the smoked Vermont cheddar bratwurst for about 6-8 minutes on each side, or until they are heated through and have nice grill marks. Ensure they reach an internal temperature of 160°F (70°C).

Assemble the Dish

Place each bratwurst in a bun and top generously with the apple fennel slaw. Drizzle with jalapeño aioli before serving.
