Prepare the Dough
In a large bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes until frothy. Add the flour and salt, and mix until a dough forms.
Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover it, and let it rise in a warm place for 1 hour, or until it doubles in size.
Form the Pretzels
Preheat the oven to 450°F (232°C). Once the dough has risen, punch it down and divide it into 8 pieces. Roll each piece into a long rope and shape it into a pretzel.
Boil the Pretzels
In a large pot, bring 10 cups of water to a boil, then add the baking soda. Carefully drop each pretzel into the boiling water for about 30 seconds. Remove and place them on a baking sheet lined with parchment paper.
Bake the Pretzels
Sprinkle the pretzels with coarse sea salt and bake in the preheated oven for about 12-15 minutes, or until golden brown.
Prepare the Accompaniments
Serve the pretzels warm with mustard, pickles, and Haus Liptauer cheese on the side.
