Prepare the Beef
In a mixing bowl, combine the American Wagyu beef with salt and black pepper. Gently mix until evenly seasoned, being careful not to overwork the meat.

Form Patties
Divide the beef mixture into two equal portions and shape them into burger patties, about 1-inch thick. Make a small indentation in the center of each patty to prevent them from puffing up while cooking.
Cooking the Patties

Cook the Burgers
Preheat a grill or skillet over medium-high heat. Cook the burger patties for about 4-5 minutes on one side. Flip the patties and place a slice of Prairie Breeze cheddar cheese on each patty. Cook for an additional 3-4 minutes, or until the cheese is melted and the patties reach your desired doneness.

While the burgers are cooking, slice the white onion into thin rings. Set aside for burger assembly.

Prepare the Potatoes
Peel the russet potatoes and cut them into thin strips to resemble fries. Rinse them in cold water to remove excess starch and dry thoroughly with paper towels.

Fry the Potatoes
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 4-5 minutes. Remove from oil and drain on paper towels. Season with salt to taste.
