Method

Preparation of Potatoes

  1. 1

    Peel and Chop Potatoes

Peel the Yukon Gold potatoes and cut them into evenly sized pieces, about 1-2 inches.

  2. 2

    Boil Potatoes

Add the chopped potatoes to a large pot and cover with cold water. Add a pinch of salt. Bring the water to a boil over medium-high heat, then reduce to a simmer. Cook for about 15-20 minutes or until the potatoes are fork-tender.

Making Pommes Purée

  1. 3

    Drain and Steam Dry

Once the potatoes are tender, drain them in a colander and let them sit for a few minutes to steam dry, removing excess moisture.

  2. 4

    Mash Potatoes

Using a potato ricer or a fine mesh sieve, pass the potatoes through into a mixing bowl. This will ensure a silky texture.

  3. 5

    Incorporate Butter and Cream

In a saucepan, gently heat the heavy cream until warm. Add the unsalted butter to the warm cream and stir until melted. Gradually add the butter and cream mixture to the mashed potatoes, stirring continuously until smooth and creamy.

  4. 6

    Season the Purée

Add salt and white pepper to taste, mixing well to combine. Adjust seasoning as necessary.
