    Prepare the Chicken

    Preheat your oven to 425°F (220°C). Pat the chicken dry with paper towels and season it generously with salt and black pepper, both inside and out.

    Sear the Chicken

    In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, place the chicken breast-side down and sear for about 5-7 minutes until golden brown. Flip the chicken over.

    Add Flavor

    Stuff the cavity of the chicken with garlic cloves, fresh rosemary, and lemon halves. Transfer the skillet to the preheated oven and roast for about 1 hour or until the internal temperature reaches 165°F (74°C).

    Rest the Chicken

    Remove the chicken from the oven and let it rest for at least 10 minutes before carving.

Spinach

    Sauté the Spinach

    In a separate pan, melt butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Cook the Spinach

    Add fresh spinach to the pan, season with salt and black pepper, and cook for about 3-4 minutes until wilted. Remove from heat.

Chicken Jus

    Make the Chicken Jus

    In the skillet used for roasting the chicken, add chicken stock and bring to a simmer over medium heat. Scrape up any brown bits from the bottom of the skillet.

    Finish the Jus

    Whisk in butter, fresh thyme, salt, and black pepper. Simmer for 5-10 minutes until slightly thickened.
