Preparing Swordfish

Cooking Orzo

Cook the Orzo
In a saucepan, bring vegetable broth to a boil. Add orzo pasta and cook according to package instructions, usually about 8-10 minutes. Drain and return to the pot.

Add Cheese and Parsley
Stir in Parmesan cheese and chopped parsley into the cooked orzo. Keep warm.

Blend Romesco Ingredients
In a food processor, combine roasted red peppers, Marcona almonds, minced garlic, red wine vinegar, olive oil, and salt. Blend until smooth. Adjust seasoning if necessary.
Preparing White Wine-Saffron Broth

Simmer the Broth
In a saucepan, combine white wine, vegetable broth, saffron threads, and bring to a gentle simmer. Season with salt and black pepper to taste. Allow to simmer for about 10 minutes.
