Beef Preparation

Roast the Beef
Preheat your oven to 325°F (163°C). Rub the top round beef roast with olive oil, then season it generously with salt, black pepper, garlic powder, and onion powder. Place it in a roasting pan and roast in the preheated oven for about 1.5 to 2 hours or until it reaches an internal temperature of 135°F (57°C) for medium rare.

Rest the Beef
Once cooked, remove the roast from the oven and let it rest for 15 minutes before slicing. This allows the juices to redistribute.
Au Jus Preparation

Make the Au Jus
In a medium saucepan, combine the beef broth, Worcestershire sauce, thyme, and bay leaf. Bring to a simmer over medium heat and let it cook for about 15 minutes. Remove from heat and strain before serving.
Horseradish Cream Preparation

Mix the Horseradish Cream
In a bowl, mix together the sour cream, prepared horseradish, lemon juice, and salt to taste until well combined. Cover and refrigerate until ready to use.
Sandwich Assembly

Assemble the Sandwiches
Slice the rested beef thinly against the grain. Cut the French rolls in half and layer the bottom half with slices of beef and top with Havarti cheese. Place the sandwiches under a broiler for 2-3 minutes until the cheese is melted.
Pommes Frites Preparation

Prepare the Pommes Frites
While the beef is resting, wash and cut the potatoes into thin strips. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt to taste.

Serve the Dish
Serve the sandwiches with a side of pommes frites and a small bowl of au jus for dipping. Add a dollop of horseradish cream on the side.
