Prepare the Steak
Season the filet mignon with salt and crushed black peppercorns. Press the peppercorns into the meat to ensure they adhere.

Deglaze the Pan
Carefully add the brandy to the skillet to deglaze, scraping up any browned bits from the bottom. Allow to cook for 1 minute.

Make the Sauce
Add the beef stock, heavy cream, and Dijon mustard to the skillet. Stir to combine and let simmer for 5-7 minutes until the sauce thickens slightly.

Prepare the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the dried potatoes in batches to avoid overcrowding. Fry for about 5-7 minutes until golden and crispy. Remove and drain on paper towels.

Sprinkle the fries with salt while they're still hot.
