Method

Preparing the Chocolate Fondant

    Melt the Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Set the bowl over a pot of simmering water (double boiler method) and stir until completely melted and smooth. Remove from heat and let it cool slightly.

    Mix Sugar and Eggs

    In a separate mixing bowl, whisk together the granulated sugar and eggs until the mixture is pale and slightly thickened.

    Combine Mixtures

    Gradually pour the melted chocolate mixture into the egg and sugar mixture while whisking continuously to prevent the eggs from cooking.

    Add Dry Ingredients

    Sift in the all-purpose flour and add the pinch of salt and vanilla extract. Gently fold the ingredients together until just combined. Be careful not to overmix.

    Prepare Ramekins

    Preheat the oven to 200°C (392°F). Grease four individual ramekins with butter and dust with cocoa powder to prevent sticking.

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling each about ¾ full.

    Bake

    Place the ramekins on a baking sheet and bake in the preheated oven for 10-12 minutes, or until the edges are set but the center is still soft and gooey.

    Cool and Serve

    Remove from the oven and let the fondants sit for 1-2 minutes. Carefully invert each ramekin onto a plate, allowing the fondant to fall out. Serve immediately with scoops of vanilla ice cream and fresh berries if desired.
