Whiskey Preparation

    Mashing

    In a large mash tun, combine the barley, corn, and rye. Add hot water to the grains, ensuring the temperature is around 150°F (65°C). Stir well and let it rest for 60 minutes to allow the sugars to dissolve.

    Cooling and Fermentation

    After mashing, cool the mixture down to about 70°F (21°C) and transfer it to a fermentation vessel. Sprinkle the yeast over the surface and add the honey. Stir gently to combine. Seal the vessel and allow it to ferment for about 5 to 7 days.

Distillation

    First Distillation

    Once fermentation is complete, transfer the liquid to a still for the first distillation. Heat it slowly until the alcohol vapors rise. Collect the distillate until you reach about 70% alcohol by volume.

    Second Distillation

    Re-distill the collected distillate to increase purity and flavor. Collect the hearts cut, which typically occurs between 60% to 70% alcohol by volume.

Aging Process

    Barrel Aging

    Transfer the distilled whiskey into charred oak barrels. Seal and store in a cool, dark place for at least 2 years to develop complex flavors.

    Bottling

    After aging, taste the whiskey and adjust with water if necessary. Once satisfied, bottle the whiskey in clean glass bottles and seal them.
