    Prepare the Vegetable Broth

    In a pot, heat the vegetable broth and keep it warm over low heat.

    Sauté Onion and Garlic

    In a large pan, heat sunflower oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional 1 minute.

    Cook the Arborio Rice

    Add the Arborio rice to the pan, stirring to coat the grains. Cook for about 2 minutes until the rice is slightly translucent.

    Add Broth Gradually

    Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Allow the rice to absorb most of the broth before adding the next ladle. Continue this process until the rice is creamy and al dente, about 18-20 minutes.

    Sauté Oyster Mushrooms

    In a separate pan, sauté the sliced oyster mushrooms in a bit of sunflower oil until golden brown. Season with salt and pepper.

    Combine Ingredients

    Once the risotto is cooked, stir in the sautéed oyster mushrooms, grated Crucolo cheese, and adjust seasoning with salt and pepper.

    Plate the risotto and garnish with confit artichoke and pickled sweet potato on top.
