    Prepare the Steak Tartare

    Finely chop the grass-fed beef and place it in a mixing bowl. Add chopped shallots, capers, Dijon mustard, Worcestershire sauce, and parsley. Mix well and season with salt and pepper to taste.

    Make the Aioli

    In a bowl, whisk together the egg yolk, minced garlic, and lemon juice. Gradually add the melted beef tallow while whisking until emulsified. Stir in chopped rosemary and season with salt and pepper.

    Fry the Shallots

    Heat vegetable oil in a frying pan. Dredge the thinly sliced shallots in flour and fry in batches until golden brown and crispy. Remove and drain on paper towels.

    Assemble the Dish

    Serve the steak tartare in a bowl, topped with a quail egg yolk, a dollop of rosemary & tallow aioli, and crispy shallots on top. Serve with warm baguette slices on the side.
