Preparation
1. Prepare the Shellfish
Rinse the oysters and clams under cold water. Place them on a platter with ice.
2. Steam the Mussels
In a pot, melt butter and sauté garlic until fragrant. Add mussels, Old Bay seasoning, and a splash of water. Cover and steam until mussels open. Serve with lemon wedges.
3. Make the Lobster Salad
In a bowl, mix lobster meat, mayonnaise, chopped celery, lemon juice, salt, and pepper. Chill until ready to serve.
4. Prepare the Fjord Trout Poke
Dice the trout and mix with soy sauce, sesame oil, sliced green onion, diced cucumber, and avocado. Chill until ready to serve.
5. Poach the Shrimp
In a pot, bring water, lemon, and Old Bay seasoning to a boil. Add shrimp and cook until pink and opaque. Drain and chill.
6. Make the Crab Salad
In a bowl, mix crab meat, mayonnaise, chopped green onion, lemon juice, salt, and pepper. Chill until ready to serve.
