Prepare the Ribs
Preheat your oven to 300°F (150°C). Pat the lamb ribs dry with paper towels and season them generously with salt and black pepper.

Roast the Ribs
Place the seasoned ribs on a baking sheet lined with parchment paper. Roast in the preheated oven for about 2 hours until they are tender.

Crisp the Ribs
Once the ribs are tender, increase the oven temperature to 425°F (220°C). Brush the glaze over the ribs and return them to the oven for an additional 15-20 minutes, or until the edges are crispy and caramelized.

Garnish and Serve
Remove the ribs from the oven, let them rest for a few minutes. Tear fresh herbs and sprinkle over the ribs. Serve warm with any remaining glaze on the side.
