    Prepare the Beef Short Ribs

    Preheat your grill or oven to high heat. Season the beef short ribs with salt and black pepper. Drizzle with olive oil.

    Char the Ribs

    Place the short ribs on the grill or in the oven and cook for about 4-5 minutes per side until charred and cooked to your desired doneness. Remove and let rest.

    Cook the Cipollini Onions

    In a skillet, heat a tablespoon of olive oil over medium heat. Add the cipollini onions and sauté until they are tender and caramelized, about 10 minutes.

    Prepare the Whipped Parsnips

    Peel and chop the parsnips. Boil them in salted water until tender, about 15 minutes. Drain and add to a blender with butter and heavy cream. Blend until smooth and creamy.

    Sauté the Baby Kale

    In the same skillet used for the onions, add the baby kale and sauté until just wilted, about 3-4 minutes.

    On each plate, place a generous scoop of whipped parsnips, top with the charred beef short ribs, and arrange the sautéed baby kale and caramelized cipollini onions on the side. Drizzle with chili crisp before serving.
