    Prepare the Ingredients

    Preheat your oven to 200°C (390°F). Begin by removing the sausage from its casing and crumbling it into a large skillet.

    Cook the Sausage

    In the skillet, heat 1 tablespoon of olive oil over medium heat. Add the crumbled pork and fennel sausage, cooking until browned and cooked through, about 5-7 minutes.

    Add Vegetables

    Add the maitake mushrooms to the skillet and cook for an additional 3-4 minutes until they soften. Then, add the grilled radicchio, salt, and black pepper, and stir well to combine.

    Combine with Gnocchi

    In a large mixing bowl, combine the cooked sausage and vegetable mixture with the gnocchi. Mix gently to incorporate all ingredients.

    Transfer the gnocchi mixture to a baking dish. Grate the Crucolo cheese on top and drizzle with the remaining tablespoon of olive oil. Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
