Dough Preparation

Activate the Yeast
In a small bowl, combine warm water, sugar, and yeast. Allow it to sit for about 5-10 minutes until it becomes frothy.

Mix the Dough
In a large mixing bowl, combine flour and salt. Make a well in the center and add the activated yeast mixture and olive oil. Mix until a dough begins to form.

Knead the Dough
Turn the dough out onto a floured surface and knead for about 8-10 minutes until the dough is smooth and elastic.

Prepare the Toppings
While the dough is rising, prepare the toppings. Slice the red onion, bell pepper, and mushrooms. Cook the Italian sausage in a skillet until browned, then crumble it.

Prepare the Sauce
If you are making house-made tomato sauce, blend canned tomatoes with garlic, olive oil, and herbs of your choice. Simmer for 20 minutes and set aside.
Assembling and Baking

Preheat the Oven
Preheat your woodfire oven to 475°F (245°C) or as per your oven's specifications.

Shape the Dough
Once the dough has risen, punch it down and turn it out onto a floured surface. Roll or stretch it out into your desired pizza shape.

Add Sauce and Toppings
Spread a cup of house-made tomato sauce evenly over the dough. Distribute the fresh mozzarella, red onion, bell pepper, mushrooms, and crumbled sausage evenly on top.

Bake the Pizza
Carefully place the assembled pizza in the preheated oven. Bake for 12-15 minutes until the crust is golden and the cheese is bubbling.

Remove the pizza from the oven, let it cool for a few minutes, slice, and serve hot.
