Method
Sauce Preparation
Add tomatoes and seasonings
Stir in the canned crushed tomatoes, dried oregano, salt, and black pepper. Bring the sauce to a simmer, then reduce the heat to low and let it simmer for about 15 minutes.
Finish with basil
Stir in the chopped fresh basil and simmer for an additional 5 minutes. Remove from heat and set aside.
Vegetable Preparation
Prepare the vegetables
While the sauce is simmering, wash and slice the zucchini, dice the bell pepper, and slice the red onion. Halve the cherry tomatoes and wash the spinach leaves.
Assembly and Baking
Preheat the oven
Preheat your oven to 220°C (428°F).
Assemble the pizza
Spread a layer of the tomato sauce over the pizza base (store-bought or homemade). Evenly distribute the shredded mozzarella cheese on top, followed by the prepared seasonal vegetables: zucchini, bell peppers, red onion, cherry tomatoes, and spinach.
Bake the pizza
Place the pizza in the preheated oven and bake for 15-20 minutes, or until the cheese is bubbly and golden brown and the vegetables are tender.
Slice and serve
Remove the pizza from the oven, allow to cool for a few minutes, then slice and serve hot.
