Dough Preparation

Activate Yeast
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

Make Dough
In a large mixing bowl, combine flour and salt. Mix well. Create a well in the center and add the olive oil and the yeast mixture. Gradually mix until a dough forms.

Knead Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour until doubled in size.

Add Tomatoes and Seasoning
Stir in crushed tomatoes, oregano, salt, and black pepper. Simmer for about 15-20 minutes, stirring occasionally.
Assembly and Baking

Preheat Oven
Preheat your woodfire oven to a high temperature (around 500°F or 260°C).

Roll Out Dough
Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness.

Spread a generous amount of sauce over the dough. Layer with fresh mozzarella, pepperoni, red onion, bell pepper, and mushroom.

Bake Pizza
Carefully transfer the pizza to the hot oven and bake for 10-12 minutes, or until the crust is golden and the cheese is bubbling.
