Dough Preparation

    Activate Yeast

    In a small bowl, combine the warm water, sugar, and active dry yeast. Let it sit for 5-10 minutes until frothy.

    Make Dough

    In a large mixing bowl, combine the flour and salt. Create a well in the center and add the activated yeast mixture and olive oil. Mix until the dough begins to form.

    Knead Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Sauce Preparation

    Cook Sauce

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add crushed tomatoes, oregano, salt, and black pepper. Simmer for 15-20 minutes, stirring occasionally.

Assembly and Baking

    Preheat Oven

    Preheat your wood-fired oven to around 475°F (245°C).

    Shape Dough

    Once the dough has risen, punch it down and transfer it to a floured surface. Divide into two balls and roll out each ball into a round pizza shape.

    Add Sauce

    Spread a generous layer of the prepared sauce over each pizza base.

    Add Toppings

    Distribute the fresh mozzarella, red onion, bell pepper, mushrooms, and either sausage or pepperoni evenly over the sauce.

    Bake Pizza

    Carefully transfer the pizzas to the wood-fired oven using a pizza peel. Bake for about 8-12 minutes, or until the crust is golden and the cheese is bubbly.

    Remove the pizzas from the oven, slice, and serve hot.
