Preparing the Patties

Form the Patties
In a mixing bowl, gently combine the ground beef with kosher salt and black pepper. Divide the mixture into two equal portions and form each into a ball. Flatten each ball slightly to form patties, ensuring they are slightly larger than the buns.

Preheat the Grill
Prepare your woodfire grill for high heat cooking. This will give the burgers a nice smoky flavor.
Cooking the Patties

Grill the Patties
Place the patties on the grill and cook for about 3-4 minutes on one side without pressing down on them. Flip the patties, and place one slice of American cheese on each patty. Cook for another 3-4 minutes or until they reach your desired doneness.

Allow the cheese to melt over the patties during the last minute of cooking.

Build the Burger
On the bottom half of each toasted brioche bun, spread 1 tablespoon of dijonaise. Place the cheeseburger patty on top, followed by sautéed onions and pickle slices. Top with the other half of the bun.
