Garlic Crème Fraîche

    Prepare the Garlic Crème Fraîche

    In a bowl, combine crème fraîche, minced garlic, salt, and black pepper. Mix well until smooth. Set aside to allow flavors to meld.

Wild Mushroom Ragu

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.

    Cook the Mushrooms

    Add the minced garlic and chopped wild mushrooms to the skillet. Cook for about 8-10 minutes until the mushrooms are tender and browned.

    Add Flavorings

    Stir in the chopped fresh thyme, vegetable broth, salt, and black pepper. Bring to a simmer and let cook for an additional 10 minutes, stirring occasionally.

Cheese Topping

    Assemble the Dish

    Preheat the oven to 375°F (190°C). In a baking dish, spread the wild mushroom ragu evenly. Top with slices of fresh mozzarella, followed by grated fontina and parmesan.

    Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.

    Remove from the oven, sprinkle with chopped fresh parsley, and drizzle with the garlic crème fraîche before serving.
