Preparation

    Prepare the Ingredients

    Gather all the ingredients. Drain the fresh mozzarella and cut it into bite-sized pieces. Crumble the goat cheese. Grate the parmesan cheese if not pre-grated.

    Rehydrate Sun-Dried Tomatoes

    If using dry sun-dried tomatoes, soak them in warm water for about 15 minutes to rehydrate, then chop into small pieces. If using oil-packed sun-dried tomatoes, simply chop them.

Assembly

    Combine Ingredients

    In a large mixing bowl, combine the fresh mozzarella, goat cheese, sun-dried tomatoes, and grated parmesan cheese.

    Add Red Sauce

    Pour the red sauce over the cheese mixture and gently toss to combine until all ingredients are coated.

    Dress with EVOO

    Drizzle the extra virgin olive oil over the top, and season with salt and pepper to taste. Toss gently to combine.

    Serve with Arugula

    On a serving platter, lay a bed of arugula. Spoon the cheese and sun-dried tomato mixture over the arugula. Garnish with additional parmesan if desired.
