    Prepare the Vegetables

    Wash the fresh spinach thoroughly under cold water and set aside to drain. Clean the mushrooms with a damp cloth and slice them thinly.

    Prepare the Mozzarella

    Drain the fresh mozzarella and cut it into small cubes or tear it into pieces, depending on your preference.

    Grate the Grana Padano

    Using a cheese grater, grate the Grana Padano cheese and set aside.

    Sauté the Spinach and Mushrooms

    In a skillet over medium heat, add a splash of olive oil. Once hot, add the sliced mushrooms and sauté for about 3-4 minutes until they are softened. Add the fresh spinach and cook for an additional 2-3 minutes until wilted. Remove from heat and set aside.

    Assemble the Dish

    In a baking dish or on a pizza stone, spread the pizza sauce evenly across the base. Scatter the sautéed spinach and mushrooms over the sauce. Evenly distribute the fresh mozzarella pieces and then sprinkle the grated Grana Padano cheese on top.

    Bake

    Preheat the oven to 220°C (428°F). Bake the assembled dish in the preheated oven for 12-15 minutes, or until the cheese is melted and bubbly and the edges are golden brown.
