Cook the Sausage
In a large skillet over medium heat, add the olive oil. Once hot, remove the casing from the fennel sausage and crumble the sausage into the skillet. Cook for about 8-10 minutes, stirring occasionally, until browned and cooked through.

Make the Sauce
In the same skillet with the cooked sausage, add minced garlic and sauté for 1 minute until fragrant. Then, pour in the canned crushed tomatoes, dried oregano, salt, black pepper, and sugar. Stir well to combine. Reduce heat to low and let simmer for about 15 minutes, stirring occasionally. Add the chopped fresh basil just before removing from heat.

Combine and Serve
Once the sauce is ready, preheat the oven to 400°F (200°C). In a baking dish, spread a layer of the sausage sauce mixture. Place slices of fresh mozzarella over the sauce. Bake in the preheated oven for 15-20 minutes or until the mozzarella is bubbly and golden. Garnish with fresh basil leaves before serving.
