Cooking the Pasta

    Boil the Water

    In a large pot, bring water to a boil. Once boiling, add salt.

    Cook the Pasta

    Add the pasta to the boiling water and cook according to package instructions until al dente. Drain and set aside.

Preparing the Cheese Sauce

    Make a Roux

    In a large saucepan over medium heat, melt the butter. Once melted, add the flour and whisk continuously for about 2 minutes until lightly golden.

    Add Milk

    Slowly pour in the milk while whisking constantly to avoid lumps. Cook until the mixture thickens, about 5 minutes.

    Incorporate Cheeses

    Remove the saucepan from heat and stir in the grated Pecorino Romano and Parmigiano-Reggiano cheeses until melted and smooth.

    Stir in the minced garlic and black pepper, mixing well to combine.

    Finally, stir in the extra virgin olive oil until fully integrated into the cheese sauce.

Combining Pasta and Sauce
