Prepare the Cheeses
Slice the fresh mozzarella, fontina, and smoked provolone into thin pieces. Grate the Grana Padano cheese.

Prepare the Garlic
Mince the garlic cloves finely.
Cooking

Heat Olive Oil
In a large skillet, heat the olive oil over medium heat until it shimmers.

Add Cheeses
Layer the sliced fresh mozzarella, fontina, and smoked provolone in the skillet. Cook until the cheeses start to melt, about 3-4 minutes.

Add Grana Padano
Sprinkle the grated Grana Padano on top of the melted cheeses and allow it to melt for an additional 2 minutes.
Finishing Touches

Season the Mixture
Sprinkle the oregano and red pepper flakes over the cheese mixture. Stir gently to combine.

Add Arugula
Remove from heat and fold in the arugula until just wilted.

Transfer the quattro formaggi to a serving plate and drizzle with a little extra olive oil if desired. Serve warm.
