Preparing the Porcini

Boil the Pasta
In a large pot, bring salted water to a boil. Add the radiatore pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
Making the Sauce

Sauté the Aromatics
In a large skillet, melt the butter over medium heat. Add the chopped shallots and sauté for 2-3 minutes until they are translucent. Add the minced garlic and chopped porcini mushrooms, and cook for another 2-3 minutes.

Deglaze with Wine
Pour in the white wine and let it simmer for 5-7 minutes until it reduces slightly.

Add Lemon and Cheese
Stir in the lemon juice and grated Parmesan cheese. Mix well until the cheese is melted and the sauce is creamy.

Combine Pasta and Sauce
Add the cooked radiatore pasta to the skillet with the sauce. Toss to coat the pasta evenly, adding reserved pasta water as needed to reach desired sauce consistency.

Finish with Truffle Oil and Salt
Drizzle the truffle oil over the pasta and sprinkle with Maldon sea salt. Toss again to combine.
