Preparation of Garlic Aioli

    Make the Aioli

    In a mixing bowl, combine the mayonnaise, minced garlic, lemon juice, salt, and black pepper. Whisk until smooth and creamy. Adjust seasoning to taste. Set aside in the refrigerator to chill.

Cooking and Assembly

    Crisp the Prosciutto

    In a skillet over medium heat, add the prosciutto slices. Cook for about 3-5 minutes on each side until crispy. Remove from the skillet and let drain on paper towels.

    Toast the Sourdough

    In the same skillet, add the sourdough slices and toast until golden brown on both sides. This should take about 2-3 minutes per side.

    Prepare the Tomato

    While the bread is toasting, slice the large tomato into thin rounds.

    Assemble the P.A.C.T.

    On the toasted sourdough, spread a generous layer of garlic aioli. Layer on the arugula, followed by the crispy prosciutto, provolone cheese, and sliced tomatoes. Top with another slice of toasted sourdough, and serve immediately.
