Method

Pasta Preparation

  1. 1

    Cook the Fettuccine

Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions, usually about 8-10 minutes, until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set aside.

Sauce Preparation

  1. 2

    Prepare the Garlic

While the pasta is cooking, finely mince the garlic cloves.

  2. 3

    Make the Sauce

In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

  3. 4

    Add Cream

Pour in the fresh cream and stir well. Allow the mixture to simmer for 3-4 minutes, letting it thicken slightly.

  4. 5

    Combine Ingredients

Add the cooked fettuccine to the skillet, tossing gently to coat the pasta in the sauce. If the sauce is too thick, add some reserved pasta water, a little at a time, until desired consistency is reached.

  5. 6

    Finish the Dish

Grate the Grana Padano cheese over the pasta, season with salt and black pepper to taste, and toss again to combine.
