Preparation of Chicken Cutlet

    Prepare Chicken

    Slice each chicken breast in half horizontally to create thin cutlets. Season with salt and black pepper.

    Bread the Chicken

    Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each cutlet in flour, dip in eggs, and coat with breadcrumbs.

    Fry the Chicken

    Heat vegetable oil in a large skillet over medium-high heat. Once hot, fry the breaded chicken cutlets for 4-5 minutes on each side or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.

Preparation of House Made Red Sauce

    Sauté Garlic

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Add Tomatoes and Seasoning

    Stir in crushed tomatoes, oregano, basil, salt, black pepper, and sugar. Bring to a simmer and let cook for 20 minutes, stirring occasionally.

Assembly of Sammie

    Prepare the Buns

    While the sauce simmers, slice the brioche buns in half and lightly toast them on a skillet or grill.

    Assemble the Sammie

    Place a fried chicken cutlet on the bottom half of each toasted brioche bun. Spoon a generous amount of red sauce over the cutlet, then top with provolone cheese slices. Place the top half of the bun on and press down gently.

    Melt the Cheese

    Place the assembled sandwiches back in the skillet over low heat, cover, and cook for 2-3 minutes or until the cheese melts.
