    Wash the Russet potatoes thoroughly under cold running water to remove any dirt. Using a sharp knife or a mandoline slicer, slice the potatoes into thin rounds, about 1/8 inch thick. Place the slices in a bowl of cold water to prevent browning.

    Prepare the Spice Blend

    In a small bowl, combine paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Mix well until all spices are evenly incorporated. Set aside.

Frying

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature for accuracy.

    While the oil is heating, remove the potato slices from the water and dry them thoroughly using paper towels. This step is essential to prevent the oil from splattering.
