Dough Preparation

Activate Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Make Dough
In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.

Knead Dough
Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Prepare Filling
Once the dough has risen, punch it down and divide it into small balls (about the size of a golf ball). Flatten each ball into a disk.

Add Cheese
Place a tablespoon of Havarti cheese in the center of each disk and fold the dough over, sealing the edges tightly.

Fry Coccoli
In a deep frying pan, heat oil to 350°F (175°C). Fry the stuffed dough balls in batches until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.

Make Garlic Butter
In a small saucepan, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Stir in chopped parsley and salt to taste.
