Method

Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until frothy.

  2. 2

    Mix Dough

In a large mixing bowl, combine all-purpose flour and salt. Create a well in the center and add the activated yeast mixture and olive oil. Mix until a rough dough forms.

  3. 3

    Knead Dough

Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

  4. 4

    Let Dough Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Filling Preparation

  1. 5

    Prepare Cheese

While the dough is rising, cut the Havarti cheese into small cubes (about 1/2 inch).

Forming Coccoli

  1. 6

    Shape Dough Balls

Once the dough has risen, punch it down and divide it into small pieces (about 1.5 inches in diameter).

  2. 7

    Stuff with Cheese

Flatten each piece of dough in your palm, place a cube of Havarti cheese in the center, and fold the dough over to seal it, rolling it into a ball.

Frying

  1. 8

    Heat Oil

In a deep pot, heat vegetable oil to 350°F (175°C).

  2. 9

    Fry Coccoli

Carefully drop the stuffed dough balls into the hot oil, frying them in batches for about 3-4 minutes, or until golden brown. Remove and drain on paper towels.

Garlic Butter Preparation

  1. 10

    Make Garlic Butter

In a small saucepan, melt the unsalted butter over medium heat. Add minced garlic, salt, and black pepper. Cook for 2-3 minutes until the garlic is fragrant.

Serving

  1. 11

    Finish and Serve

Drizzle the garlic butter over the fried coccoli and serve immediately while hot.
